Cooking Corner: Energy snack balls
Utilising natural sugars to create a quick, easy snack to keep in your fridge or take on a ride for an energy boost. Whats best, its just four ingredients.
Ingredients: To make 10-15 balls
150g medjool dates, pitted
100g oats
1 tbsp agave (or honey)
Optional; Desiccated coconut to finish
Method
Place the dates, oats and agave into a food processor and blitz until well combined. You may need to add a little water if the date mixture clumps.
Shape mixture into 10-15 equal sized balls
Roll balls in desiccated coconut (or another topping; try crushed pistachio or sesame seeds!)
Store in the fridge for up to one week.
